Located in the picturesque village of Southrop, Thyme is a beautiful country retreat with a passion for the seasons, produce and comfort in style. With no children allowed under the age of 12, this is one for the grown-ups.
The majority of the bedrooms are situated in houses and cottages around the courtyard to the north of their magnificent barns. The rooms are contemporary but with a classic feel. We loved the rooms in the Lodge which each have their own individual character including a vintage Hollywood-styled room, complete with home cinema and private access to the lawn. Five contemporary garden rooms situated in the landscaped Ox Barn garden, each with a private garden are also coming soon.
Meals are very largely based on what’s ripe in the Kitchen garden. Breakfast (all home produced, from granola to rhubarb and ginger jam to eggs laid by the Hibberts’ chickens) is served in the new Ox Barn restaurant, which is headed up by ex Quo Vadis chef Charlie Hibbert. For a little variation in your evening meals, you can hop across the road to The Swan which is only a few minutes’ walk from Thyme. This 17th century inn cooks up seasonal delights such as partridge with squash and borlotti beans (from the garden of course) and also boasts a private dining room perfect for a special occasion. With a roaring fire and local patrons propping up the bar, it provides a wonderful atmosphere of an evening.
There is also a state of the art cookery school offering a wide range of classes such as Bread Making, Charcuterie, Rustic Italian, Fish & Shellfish and activities such as clay pigeon shooting, or archery are located within the grounds of the estate. In addition, they have recently finished ‘Phase One’ of their Meadow Spa with their heated spring water swimming pool and yoga studio, as well as eight treatment rooms to soothe those aches and pains away. They are the only spa where you can be basted in Aurelia products, a probiotic skincare line that has to be experienced to be believed.
