Having spent his former years working at the famed Le Manoir aux Quat Saisons (Raymond’s place) he has drawn on his Icelandic  heritage to deliver delicate, creative dishes. The menu is to the point relying on the finest produce cooked to perfection. The Icelandic lightly salted cod with avocado and chorizo is worth the trip alone.
